Elk burgers are in - cow is out!

Jason went to the Boise farmer’s market and picked up 6 elk burgers and a pound of ground elk. The meat is from a local Elk ranch. The burgers are very good and do not taste ‘gamey.’ The taste is closer to buffalo meat than beef, lean not fatty. A 6 oz burger has only 6 grams of fat and 240 calories compared to beef with about 25 grams of fat and 400 calories.
I have decided to give up cow’s meat along with all other meats I do not know the animal’s origin and how it was raised. I am totally disgusted by the way animals are treated and killed for food in this country (not to mention other countries like China). There is a company that raises cows for meat about 20 minutes from here. Jason and I drove past the land one day on our way to visit the CJ Strike Dam. I was in shock and horrified. The land (acres and acres) was filled with cows standing shoulder to shoulder on dirt and their own feces. There was no place for each cow to move so they all just stood there unable to take a step.

I am not ready to go completely vegetarian. I don’t think that is the way I want to go right now. I am, however, very dedicated to eating only meat that is local and humanely treated.
