“I guess life ain’t all that bad”

“I Used to Love Parades” by Blue Highway. This is a really good bluegrass song. I don’t know too much about the band, other than the fact that I have really enjoyed what I’ve heard. By the way, I quote the lyric with my tongue in my cheek; our life is pretty darn good, when you really think about it. More often than not, if we feel like complaining, it’s because we are experiencing a temporary lack of perspective and gratitude.
Sometimes, there’s nothing better than a Saturday morning, especially when you make good use of it by spending time with family and doing things you enjoy rather than working. I was struck by the truth of this this morning when I found myself sitting in my underwear, feeding Maggie hummus and pita bread. Erin had just left for a run with Wilson (not to imply that Erin being out of the house added to the goodness of the morning). There was nothing on the agenda for the day that was highly demanding and it was easy to catch my breath. It was a nice moment of clarity.
By the way, the best hummus recipe we have found (not that we’ve tried a huge number of them) is on page 13 of Nick Stellino’s Mediterranean Flavors. You can serve it with the traditional pita bread, something of your choosing, or you might want to try my personal favorite, Wasa.
Hummus Bi Tahini
1 (15oz) can chickpeas, i.e. garbanzo beans, drained
4 tblspns lemon juice
4 tblspns roasted tahini (sesame seed paste)
2 tblspns hot water
1 tspn salt
2 garlic cloves
1/8 tspn ground cumin
1/8 tspn cayenne pepper
1 tblspn extra virgin olive oil
1/8 tspn paprika
1 tblspn chopped fresh Italian parlsey
Place the chickpeas, lemon juice, tahini, water, salt , garlic, cumin and cayenne pepper in the bowl of a food processor or blender. Process for 1-2 minutes (I usually do it for at least 2), until smooth. If serving immediately, spoon the hummus into a serving bowl, drizzle with the olive oil and sprinkle with the paprika and parsley. If the hummus is being prepared ahead of time, cover the bowl and refrigerate for up to 1 week. (The intensity of the garlic will increase as the hummus ages.) I always mix everything together and throw it in the fridge; I think it tastes better cold. Believe it or not, I would rather eat this as a snack rather than some other things which are not nearly as good for me. I don’t know why; it’s not sweet at all. Bottom line, it’s good stuff and really good for you.
